- Dawning Day Farms is a small family owned and operated micro-vineyard.
- Rylestone wine region will feature on Thursday 14 November with wines from De Beaurepaire Wines
- $90pp includes three course share-style menu and paired wines throughout the evening
- The family pioneered Rylstone as a wine region because they discovered an ancient limestone rich terroir with shallow sandy soils and ultra-cool inland climate similar to their homeland of Burgundy. As stewards of their land and honouring their Burgundian forebears, they pursue a French winemaking style. An elegant, balanced and age-worthy style that captures the exceptional character of their special limestone-based terroir, celebrating the variations of each vintage using regenerative farming with the minimum of intervention in the winery.
- Young wine region will feature on Tuesday 19 November with wines from Freeman Vineyards
- $100pp includes three course share-style menu and paired wines throughout the evening
- A unique small specialist family winery, boasting Australia’s only plantings of two northern Italian origin grape varieties – Rondinella and Corvina. It leads a portfolio of mostly Italian inspired wines that have consistently retained the prestigious Star Ratings in the Halliday Wine Companion. “One of those wonderfully genuine places where the fascinating wines are the main attraction, while the authentic facilities are a conduit for a memorable tasting.” Mike Bennie, Gourmet Traveller Wine.
- Tumbarumba wine region will feature on Thursday 28 November with wines from Wondalma Vineyard
- $90pp includes three course share-style menu and paired wines throughout the evening
- Wondalma is a family farm made up of a little bit of vineyard and a little bit of grazing land for their cows, close to the NSW rural town of Tumbarumba. The vineyard was established in 1992, originally planted for sparkling wines, it consists of various Chardonnay and Pinot Noir clones. The vines are grown in basalt soil on northeast-facing slopes. The cool temperatures and altitude help to maintain the delicate flavours in the grapes and ensures a gentle ripening period.
